This is a bug I’ve come across repeatedly(mainly on Realms) – your inventory has a desync. Your diamonds or sticks are actually one higher than they are shown. As such, the inventory bugs out and won’t let you do anything with or to them. Reloading the game works, as does placing the bugged item in the world. It will not, however, be fixed if you pick up another of the bugged item. It won’t.
Edit: I forgot to mention that the placing item fix only works if the bugged item is in your hotbar – you can’t even move the bugged item around your inventory.

Have you tried leaving the world then rejoining it back or quitting out Minecraft and starting up Minecraft again try those things it might help!
