Any way I could make this path better? I feel like it’s just a bit too plain. (Eg different blocks for variation etc)

I think the blocks you have are fine and more would just make it look too busy. What you can do is vary the shape so it’s more natural and not as straight. Another point is blending it with the grass more; have grass blocks in the path and coarse dirt/podzol/path blocks outside of it
