Something that helps me in the mines is have auto attack on and when a flying enemy comes to you, attack and then mine while the enemy is flying back to you.
In your inventory you should put your sword next to your pickaxe so it is more accessible

PSA for all you Stardew noobs: DIAMONDS AREN'T RARE. They're helpful, sure. Sell nice too. But they are NOT rare, not even a little bit
You should really be attacking the ghosts. Later on in game you will have a way to enchant weapons with prismatic shard and i highly recommend one that kills ghosts/mummies/skeletons. No one talks very highly of it in the community but i find it super helpful. Stardew wiki is also very helpful in general

Diamoonds are really rare but the coveted prismatic shard is arguably the rarest gem. It only has something like a 0.1 percent chance of being found in an omni geode and can be found other ways but it is very rare
