Some Sauropods, aka, the biggest animals to have ever walked the earth, have been found with spikes along their back. They did not need them there, as no other animal could reach up to their back, *as adults*. But it would protect babies and juveniles.
The Enderdragon is alone, in an almost empty dimension. We know there have been more, as the heads on ships exist. This means that the spikes were most likely evolved to protect the babies and juveniles here too. The question is against what.
I would guess other dragons, as the spikes would be too small and limited to stop endermen and shulkers. But would work nice as protection against adult dragons trying to bite down on the young ones.
