you can explore end islands, fight the wither, fight an ocean monument, or woodland mansion, do the new trial chambers. find an ancient city.
basically, theres still a ton to do.
you could even try and complete every achievement/advancement

kill the enderdragon 20ish times to fullfill a cirlce around your end Island. farm the obsidian if you wanna tho, the turrets respawn everytime you respawn the enderdragon. (doing that in my survival world currently. [modded] bc I need plenty of obsidian for my bases etc)

•Make a full diamond armour
•Make 2 sets of diamond tools
•Make a villager trading hall
•Enchant the 2 sets of tool with different enchantments (for ex-silktouch and fortune)
•get Nethirite
•upgrade the tools n armour to Netherite
•find a village in plains biome
•make a house near or in village
•upgrade all villagers houses (tutorials on YouTube)
•find various structures
•kill wither and warden
•make an all mobs museum
•make an all blocks museum
•make an all rare items museum
•get elytra
•make all farms (skeleton, zombie, creeper, witch, spider)
•get 5full chests of firework
•upgrade ancient city, woodland mansion, ect

Respawn the dragon and kill it again.
Build a redstone computer and run Doom on it.
