This was definitely one of the more complicated recipes. What they should’ve mentioned in the ingredients list is that you will need dried beans or rice. This wasn’t mentioned until you actually read the recipe which is a bit annoying. I also would’ve liked an explanation and name as to the more advanced techniques used in this recipe. For example, the dried beans are for “blind baking,” something I never heard of and had to find out by googling wtf I was doing. I was mystified as to why I was filling my pie crust with dried beans before putting it in the oven.

Another thing not mentioned was that you will need a glass bowl that happens to be just a bit smaller than your saucepan, as you will be creating a “double boiler,” something I had also never heard of until this recipe. Luckily, I did happen to already have a small glass bowl and saucepan that it fit in, but I would’ve been real irritated if I hadn’t.

They also worded it a bit weird. “put the bowl on top of the saucepan of simmering water and cook..” is all the recipe really said about the double boiler. I didn’t get it, was I supposed to put the bowl inside of the water? Like when you make a cheesecake? or was the bowl supposed to sit above the water? it wasn’t clear. I had to do some googling to find the name of the technique and realize that the bowl is supposed to sit above the water. Hope you have a bowl/saucepan that correspond in size!

It came out very delicious, and goes great with ice cream! Nice and tart and refreshing. I actually liked the crust even better than the tart itself, the crust is very sweet and has a satisfying crumbly texture that I really liked.
