I accepted Pam’s “the strong stuff” quest with 12 days left and for some reason I panicked and created 11 additional kegs (I don’t have the basement to really delve into a lot of kegs yet) and of course I can’t resell them so here we are

You did a right thing, it’s impossible to do the quest with one keg, since the processing time is around 5 days for juice.
You will need much more than that eventually and after the quest they are gonna be a good money-source if you make wine from any fruits you have. Basement allows you to age already crafted wine in casks, so you need kegs before buying basement to effectively utilise those casks
You’re gonna want as many kegs as possible later on to make the big bucks, it’ll pay off in the long run
I did this and honestly just horded a lot of fruits that can be used for the kegs too
