My cooking for the week! A lot of these recipes call for random ingredients I don't have like amaranth, nutritional yeast, pepitas, etc. Fortunately a lot of these are carried by a specialty grocery store in bulk bins so I can just grab a bit of each and not have to spend a lot on them ๐Ÿ˜ƒ This was also a fun way for me to try new ingredients

  • Pumpkin Soup: This might be my least favorite dish so far which I'm sad about ๐Ÿ™ The soup is made with kabocha squash which is very sweet, making the soup's main flavor just very sweet which I wasn't a fan of. The pecorino frico garnish/topping was pretty good though, very crispy and crunchy
  • Stir Fry: A pretty straightforward dish that I enjoyed. The stir fry sauce is simple but goes well with the veggie mix. I was actually able to find fresh shiitakes and purple carrots for this recipe so I was excited about that ๐Ÿ˜†
  • Pina Colada: This was super tasty! I don't drink often and I didn't feel like going out of my way to buy rum so I subbed in pineapple juice instead. The mocktail version was very refreshing and summery and basically tasted like a thick pineapple smoothie
  • Salmon Dinner: I love salmon so I was looking forward to this dish! I had no idea amaranth was a type of grain (or pseudocereal?) before I looked at this recipe and I wasn't sure how to feel about the texture.. it's similar to quinoa but even tinier so it was kinda grainy. The kale side salad also called for nutritional yeast which I've never had before but it gave the salad a lot of umami flavor. The seasoning for the salmon was amazingg
  • Blackberry Cobbler: Saving the best for last, this cobbler was so good! The recipe wasn't as labor-intensive although the bake time was on the longer side. Definitely worth the wait though, and it's amazing topped with vanilla ice cream!!
