I find the default look of the player arrow too rounded, it doesn’t match the style of everything else in the game.

Have you tried the settings? Journeymaps had TONS of customization options last I checked(though it has been a few years).

as long as it has a texture and you have a way to extract the jar files and extract its asset png then you can make a simple resource pack for it, but most mods don’t typically have resource changes in their config files, so you’ll just have to go in
