Fall damage isn’t negated whilst in a minecart so buoyancy is the only thing slowing you down which wasn’t enough to stop you so you died from fall damage in water. The death message says “death fell accident water” so you died by falling accidentally into water, the “accident” quantifier is because a mob didn’t cause the death.
