bosses are much more predictable, since you should know when they’ll attack and when they’ll spawn so you’re always ready. giant tortoises get you when you aren’t prepared from like off camera so you can’t tell they’re attacking until it’s too late. their attacks are quick as fuck and deal massive damage so it’s basically an instant death if you don’t react in time. you can’t react or predict them since you don’t know when they spawn or where they are at so you don’t know when they’ll attack until it’s too late which is why they kill more often than bosses. it’s the factor of unpredictablity
