Someone posted a theory awhile back that everyone in Stardew Valley is actually dead. It’s a purgatory of sorts.
Which maybe means your farmer is that dead guy we see at Joja in the intro.

Use your pickaxe to un-till the space where you collected ginger. This will cause ginger to spawn faster there, next time.

After 10 p.m in the skull mines is when the holes finally start showing up somewhat consistently after going a whole day without seeing any multiple times.
