On the breeder design with the broken down boat house… it's more realistic if the hull of the "boat" is used as a roof, it is a Greek strategy for beach assaults of legend like the battle of Troy.
Basically roof is VERY sturdy (blocks arrows and weather in a siege) rest is flimsy and easy to build/breakdown

Well those villagers u can STILL change their profession. Here's how:
1)Like those villagers are fisherman all u need to do is place a barrel down
2) Let him interact
3) Once it has interacted u can break it:)
P.S- This works with any villager profession which depends on their table
